I know, I know, I wasn’t going to post another chicken recipe, but this one was so good, I’m going to post it anyway!  We’ve been gone for a week and yesterday I ran into the grocery store and picked up some fresh fruits and vegetables.  I’m a menu and grocery list girl.  I don’t just stock certain things, I buy for specific recipes.  Yesterday, I was just trying to get food back in the kitchen.  Then came tonight… “What are we having for dinner?” my darling daughter asked. Oh yeah, dinner.  I had thawed chicken so I started looking for a recipe.  I had bought kale yesterday since it is one of my favorites.  I googled “paleo chicken” and then “paleo chicken kale” this is the recipe I found. It has a great flavor and the sauce is wonderful.  Wish everything I googled came up with results this good!

Chicken and Kale Curry

4 chicken breast, cut up

1 large bunch kale, trimmed and diced63991_10200966021012390_578665567_n

4 or 5 compari tomatoes diced

1 medium onion diced

1 can coconut milk

1 Tbs curry powder

1 Tbs turmeric

1/2 Tbs ground coriander,

1 Tbs grated fresh ginger

salt and pepper

1 Tbs coconut oil

1 Tbs olive oil

Dice chicken, then marinate for 15-30 minutes in the spices along with the tablespoon of olive oil.  When you are ready to begin cooking heat the coconut oil in a large pan, saute the diced onion until translucent. Add the marinated chicken and cook until browned, about 10 minutes.  Add the kale and toss.  As the kale begins to wilt, add the tomatoes. Finally add the can of coconut milk, simmer for 15-20 minutes until the chicken is well cooked and the sauce has thickened.  I found the basis for this one here:
