With Thanksgiving this week many of us have started out lists and grocery buying for the holiday. I usually make of list of what dishes we are having each year. It changes somewhat due to how many we are serving and who will be here. My favorite turkey recipe is Ina Garten’s recipe for Perfect Roasted Turkey http://www.foodnetwork.com/recipes/ina-garten/perfect-roast-turkey-recipe4/index.html. It calls for a stick of butter and you can substitute ghee or coconut oil if you don’t do dairy. This recipe is easy and has a great flavor. Next up is cranberry sauce. Since we don’t used the canned stuff anymore I like the recipe for Homemade Cranberry Sauce on the Pioneer Woman’s site http://thepioneerwoman.com/cooking/2008/11/homemade-cranberry-sauce/ (for some reason this won’t link, but you can copy and paste the address in your browser). I use orange zest and orange juice when I make it and it is a favorite. I usually make a big batch on Monday or Tuesday before Thanksgiving and just keep it in the refrigerator. If green bean casserole is a must for you there are several different recipes out there for paleo green bean casserole. We prefer fresh green beans cooked for about 45 minutes in salted water. Then I drain them, sauté in olive oil and a couple of cloves of garlic, and top with toasted almonds. We also really like Brussels sprouts. I use Rachel Ray’s recipe for Brussels Sprouts with Bacon http://www.foodnetwork.com/recipes/rachael-ray/brussels-sprouts-with-bacon-recipe/index.html. This is one we use quite a bit and it is always a favorite. Next on the list is sweet potatoes. No marshmallows (yuck). I just make mashed sweet potatoes. I cook the potatoes, add some ghee or butter and coconut milk until they are the consistency I want. That’s it, and they are very tasty. There is no reason why recipes have to be complicated. Buy quality, fresh, ingredients and let the flavors shine through. There are many recipe sites with Paleo thanksgiving menus you can check out. Remember you don’t always have to abandon recipes, sometimes they can easily be modified to fit your new dietary lifestyle. Substitute coconut milk or almond milk for cream, use honey or maple syrup as a sweetener, use nuts for a crunchy element, be creative.
