Several of us are getting a CSA (community supported agriculture) box of fruits and veggies each week from Southland Farms. It has been fun to go through the box and try to figure out what’s in it. We have had wonderful strawberries, kale, cauliflower, and broccoli, among other things. I must confess I had to go on the internet and look up kohlrabi. I had heard of it before, but never actually cooked with it. I have a half box which means sometimes there is not much of these interesting veggies to cook with (one kohlrabi for instance). I saved last week’s and combined it with this week’s so I had two kohlrabi. I also had four beets. What to do with two kohlrabi and four beets? I combined them with a sweet potato, drizzled them with a couple of tablespoons of melted butter, some minced garlic, salt and pepper and roasted the whole batch for 20 minutes at 425 degrees. You know what, they were really good! Good enough my suspicious family actually went back for seconds. I also took the green part of the kohlrabi and cooked it with my kale. That turned out good too. I sauted an onion in about three tablespoons of coconut oil, added some garlic, salt, and red pepper flakes. Tossed in the kale and kohlrabi greens, added a cup of chicken stock, put the lid on it and let is cook
for about 10 minutes. We also had a savoy cabbage in this weeks box and we used that to make a slaw. At one point my kitchen counter was covered in vegetables. My family came in and eyed all the vegetables cautiously. I was concerned enough that I made a batch of strawberry paleo ice cream to make sure everyone was happy. In the end they really liked the veggies and we had salmon to go with it (always a good choice in our house). They enjoyed everything enough I could have gotten away without the ice cream! I am enjoying the boxes from Southland and am looking forward to a summer of fresh veggies and adventuresome eating.
