I made this for dinner last night.  Unfortunately I ate all of mine before I remembered to take a picture.  This is a simple recipe and makes for a quick stir fry meal.  You could easily add more vegetable to the recipe.

1 pound boneless, skinless chicken thighs cut into bite sized pieces

3 cups (more or less) broccoli florets

3 Tablespoons coconut oil

juice of 2 fresh oranges

zest from 1 whole orange

1 teaspoon fresh grated ginger

3 Tablespoons coconut aminos or wheat-free soy sauce

2 teaspoons chili garlic sauce or siracha

4 green onions sliced

Combine orange juice, zest, ginger, coconut aminos and chili garlic sauce or siracha in a small sauce pan.  Bring to a boil, then turn down to a simmer while you cook the chicken and broccoli.  In a saute pan melt coconut oil.  Add chicken and broccoli to hot oil.  Stir fry until done around 6 minutes.  Pour sauce over chicken and broccoli.  Stir and coat with sauce.  Serve with green onions sprinkled over the top.  5 chicken thighs served 3 of us for dinner last night.  Enjoy!
