A few years ago, before CrossFit and our Paleo lifestyle, I received an ice cream maker for Mother’s Day. It’s one of those great machines where you keep part of it in the freezer and then when you are ready to make ice cream you just put the “bucket” in the machine, turn it on, add the mix, and in about 30 minutes you have homemade ice cream. It is one of the best $30 gifts ever, since ice cream is one of my favorites! As I began to explore paleo treats I started searching for an “ice cream” recipe. The one here today is my family’s favorite. You can change the flavor by substituting fruit for the cocoa. This is so easy, it really isn’t even a recipe….
Paleo Ice Cream
1 can coconut milk (be sure it does not have added ingredients on the can)
2 TBS cocoa (more if you like, this recipe is really easy to personalize to your own taste)
1 tsp vanilla
1/4 cup honey (again, adjust the sweetness to your own liking. You can substitute maple syrup or do a combination it is up to you)
Mix well. Taste the mix and make adjustments according to what you like. Put the mix in your ice cream maker and follow the manufacturers instructions. One can of coconut milk makes about 3 or 4 servings. Tonight my parents are in town, so I doubled the recipe. Our ice cream freezer can easily handle two cans. The first day the consistency stays very much like ice cream. After about 24 hours, it is harder than store bought ice cream, similar to homemade ice cream. It still tastes great, just takes a little more effort to serve. Give it a try and let me know what you think!
